How To: Make Lentil Soup

Lentils are a great source of meatless protein.  Add them into your dinner routine one night.


What do I need?
4-5 quart soup pot
small skillet

1 cup dried lentils, washed
1 bay leaf
3-4 sprigs of fresh thyme, or 1/2 teaspoon dried thyme
1/2 teaspoon ground cumin
1 carrot, peeled and diced
1 celery stalk, diced
5-6 cups chicken or vegetable stock
2 tablespoons olive oil
1 onion, finely chopped
2 teaspoons minced garlic
salt and pepper
